The class I attended focused on creating gastro pub-style dishes. The menu included mouthwatering options such as panko buttermilk pan fried and oven baked chicken, Asian slaw, roasted potatoes in triple fats, and a rich miso chocolate orange pudding. Under the expert guidance of the school’s talented chef, Lee Maycock, the participants were able to master each dish with confidence.
One of the highlights of the class was learning to prepare the buttermilk chicken. The technique involved soaking the chicken in a buttermilk, which resulted in a deliciously tender and flavorful dish and coating it with a fresh lemon rind panko crumb. The Asian slaw was a refreshing accompaniment, with a perfect balance of sweet, sour, and spicy flavours.
The roasted potatoes in triple fats were a decadent treat, with the combination of goose fat, duck fat, and olive oil creating a crispy exterior and a fluffy interior. Finally, the miso chocolate pudding was the perfect ending to the meal, with its rich, indulgent flavour and smooth texture.
In addition to the cooking techniques, we also honed our knife skills and chopping techniques. These essential skills are invaluable for any home cook, and the chefs provided expert guidance and demonstrations.
